I dont know about you, but I have ALWAYS struggled to cook a good chop without it getting so dry its not even worth eating. And I have tried and tried and TRIED my friends!!

But with the air fryer, this recipe is BEYOND easy and BEYOND delish!

So in carrying on with our recent Air Fryer recipe kick, lets look at how simple it is to make perfectly cooked pork chops in under 15 minutes!

If you’ve been following for a while you know that when I actually purchased the AIR FRYER on Amazon Prime Day last year, it sat in my kitchen for 6 months! I just wasn’t sure I would actually USE IT. Anyone else relate!?

WELL my friends, this little baby is a fast meal tool for those of us that eat low carb, keto and especialy carnivore! Why you ask!? Because you can have the most savory, moist but seasoned to perfection foods with a slight CRISP to any meat your heart desires! Wings! Chops! Steaks! Thighs! You name it! 

Air fryer for the MASSIVE win!

Now I will say you need to do your researce for what size you need. I just upgraded to the 5.8QT Cosori and am obsessed with it! It fits 2-3 large ribeyes perfectly, over 20 wings and a bunch of chicken thighs. When looking at what you want and need in your kitchen, make sure you take a look at counter size and basket size!

INGREDIENTS:

-2 to 4 pork chops
(Thick or think work fine)
-Avocado Oil Spray
(any non stick spray will work)
-Salt and seasoning to taste
(We love the BUTT RUB!)

DIRECTIONS:

-Preheat airfryer to 375
-Coat chops liberally with avocadooil spray, salt and seasoning
-Place in fryer for 10-14 minutes (depending on thickness of cut)
-Flip halfway and DEVOUR when finished!

Know that if you have a thin cut chop, you will want to watch the time and decrease as needed so as to not overcook. With thicker chops, make sure you cook to an internal temp of 145 and no pink. Let the chops rest for 3-5 minutes and slather butter on top!  With the Butt Rub seasoning you will get the BEST crispy coating and it is our favorite seasong to use on any cut of meat!  Most Costco’s have it as well in their seasoning section.

Low Carb Bacon Butter Shrimp

Bacon Butter Shrimp. Its what dreams are made of y’all. 
Last night was one of THOSE NIGHTS and mama was just TIRED. 

But we were hungry and I had a TON of shrimp on hand with every intention of making
I Breathe Im Hungry’s Bang Bang shrimp recipe!  Sadly I was out of some ofthe main ingredients and felt stuck with what to do. 

What do you do when you feel stuck in a dinner rut?

You grab bacon. 

Thats right friend. BACON

I had shrimp, butter, bacon and garlic. Oh. And an air fryer that loves to be put to work!

So I said to myself “Well Self, these here are some fine ingredients. Something marvelous is surely to come of this.” And boy oh boy was I right! (And I love it when I am right LOL!)

Meet the easiest dish that had my husband groaning with delight

Low Carb Bacon Butter Shrimp.

Sounds easy enough, right!?

RIGHT!!!

I grabbed my lovely Cosori air fryer, tossed in some frozen shrimp, set the temp to 375 and 11minutes later I doused it in the bacon butter mixture. VOILA. Dinner was served!

It was really that easy y’all! And the best thing is it was SO satisfying!  It would be delicious over a bed of cauliflower mash, sautéed cabbage or any other veggie side. The options are endless my friends!

Keto can and always can be easy if you take a look at the staples you have in your fridge and toss some of the star players together!  These combos were a match made in heaven and I am sure you are going to LOVE this dinner idea on busy nights!

Serves 2-3 people roughly

INGREDIENTS:

20-25 Medium shrimp or 10-15 large (We used fully cooked for ease)
Really you can use as much shrimp as you want. The more the merrier!
Depending on size of air fryer, you might have to do multiple batches. 

Sauce: 
1/2 cup cooked, chopped bacon
4-5 Tbsp Butter
1/2-1 tbsp chopped garlic

DIRECTIONS:

-Preheat air fryer to 375 and spray bottom with oil
-Place frozen shrimp in fryer and set timer for 10min. (Reduce by half if shrimp is thawed and check at the 5 min mark. You want a slight crisp but be cautious to not overcook)
-While shrimp is cooking, place sauce ingredients in small pan. Once butter melts and comes to a simmer, remove from heat and set aside.
-Once shrimp is cooked, place in bowl and top with butter sauce. 
-Repeat if necessary for batches 2 and 3. 
-Serve immediately and ENJOY!!!

A BREAKFAST PIFFLE?

What on earth is a PIFFLE?

Well my friends, the story goes like this…

One dark night I was hankering for some deep dish pizza.  (Ok ok it was just a normal night… not dark as in dark dark… but you felt the intensity and suspense, right!!?) RIGHT!! Now back to the hankering… Boy oh boy was I hankering.  Not the fluffy “melt the cheese” stuff you get on KETO (yes friend this is NO melting required!) but the true crunch, delicious PIZZA type pizza. The STUPID EASY PIZZA was by far the best and most simple Keto style I had found (thanks to my husband) but I was longing for something MORE.

Behold the PIFFLE. 
A decadent, savory, crispy and crunchy Pizza Waffle. 

It will change your keto experience in regards to pizza my friend!  I promise!  I have so many NON KETO husbands that actually request this amazing concoction but the best part for you is that it is OH SO STUPID EASY!  Just watch my video HERE. I promise my reaction is 100% reeeeeaaaaalllll and I have ONLY made Keto pizza the PIFFLE way since!

So let’s fast forward to last night. 

I was hankering AGAIN but was bummed to find out that I had absolutely NO marinera in the house.  None. Nada. Ziltch. 

And the hankering was BIG y’all!!

For this recipe you WILL need a WAFFLE IRON. 
I have 2 that I cannot live without and are some of the top KETO must have kitchen appliances in my opinion! I will list a few different ones for both size and bread density and you can choose what best fits your kitchen size and family needs. 

Belgian Waffle Maker with removable plates (Easy cleanup)
Dash Mini Waffle Maker (I own 3 for fast and easy meal prep-perfect toaster size)
4 plate Dash waffle maker (perfect toaster size)

 Now to the good stuff and recipe details!

Know that all of my stupid easy recipes are VERSATILE and I encourage you to use creative liberty to craft your own flavors and balances!  If you post to Social Media, make sure to tag me so I can cheer you on and test out your latest creations!!!

INGREDIENTS:

-2 cups mozzarella cheese (mild and blends flavors very well)
-1/3 cup almond Flour (Or 1.5 Tbsp coconut flour)
-1/4 cup cooked chopped bacon
-1 chopped cooked sausage breakfast patty OR 2 sausage links 
-2Tbsp Choczero Low carb syrup
-Non stick cooking spray (We like THIS or THIS)
-2 eggs

DIRECTIONS:

-Plug in and turn on waffle iron. Depending on settings, turn temp to medium
-Mix together all ingredients in medium sized bowl
-Once heated, spray griddle with non stick spray
-Place enough batter on griddle to cover and close lid (none should seep out of sides)
-DO NOT check early. Batter will separate. Set temp to medium. If using the DASH mini waffle maker the light will turn blue when ready. 
-Waffle will look and feel crisp. When removing use a fork to remove from plates. Might stick to top plate and that is normal. 
-Immediatly add butter and syrup and INHALE!
-Best when eaten while still warm.
-Can store in airtight container in fridge. Best is reheated in toaster or air fryer. Does NOT reheat well in microwave (gets tough and difficult to chew)

You know me well my friends.

I just don’t have the time, energy or mental capacity for ANYTHING hard in the kitchen right now. I just don’t. Im a tired mama who wants something yummy but more importantly…

STUPID. EASY. 

If you have been around long enough you know that I looooooooove my kitchen gadgets that make my life a little bit easier.  Especially when I forget to pull out the thawed meat… Cue the beauty of the Instant Pot!! (Plus its on major sale right now so grab one asap!)

But what you MIGHT NOT KNOW is that it takes me FOREVER to hop on certain bandwagons with these amazing gadgets. Its like I freeze with learning something new and often times it just sits there in my kitchen for weeks or even months before I give it a go LOL.  Silly silly Rachael!

Now back to the STEAKS!!!

INGREDIENTS:
2-4 large, marbled ribeye steaks (depending on size of fryer)
Salt and pepper (other seasoning to taste)
1/4tsp olive oil
Butter (optional)

DIRECTIONS:
Bring steaks to room temp, pulling from fridge 1 hour prior to cooking
Coat steaks with olive oil, both sides
Season steaks liberally with salt, pepper, garlic etc 
Preheat Fryer to 350/375 degrees (higher temp if steaks are thicker)
Once fryer is heated, place inside (you can spray bottom if desired to avoid sticking)
Set timer for 10-12min depending on desired cook temp (We do 10m and get a medium cooked steak. You will learn your fryer and temps and cook times may vary)
Flip steaks halfway through
Remove from fryer and allow to sit for 3-5min before serving
Slather with butter and ENJOY!!!

These go FABULOUS with my Stupid Easy Bagels!!
I make them into biscuits and they are the perfect side dish!

I hope you enjoy how stupid easy this delicious meal is! Its become a weekly favorite, and I keep an eye out at the grocery store for when the steaks go on quick sale!

Stupid Easy KETO Bread Base does it again yall!

This is a super fun and incredibly easy rendition to a childhood classic PIGS IN A BLANKET!  But instead of being wrapped, I decided to make them into little piggy puffs and let me tell you… THEY ARE SO GOOD!!

I used my all time favorite MEGA CUPCAKE TIN and sliced some polish sausage to place in the center. It really is that easy! With the Stupid Easy Bagel Base, this lovely little puff is packed with all sorts of flavor! Make sure to check out the video below with the extras I added to the batter… Ok ok… I added parmesean cheese and BACON.

YALL.
SO. GOOD.

You can totally make these into the traditional “pigs in a blanket” style and wrap the batter around them. I just loved how easy the puffs were to make in the mega tin and I looooooove the convenience of these wonderful PARCHMENT PAPER BAKING CUPS that I use for EVERYTHING!!!

INSTRUCTIONS

Preheat oven to 400 Spray tins with cooking spray (We use this coconut oil spray) OR place parchment baking cups in tin
Mix all dry ingredients first THEN add eggs!
Scoop mixture evenly into muffin tin (I use a sandwich bag to keep my hands clean)
Smoosh sausage or little smokie into batter and cover top with extra
Bake for 12-17 minutesdepending on your oven cook speed
Store in air tight container for up to a week in the fridge!

INGREDIENTS

4 large eggs
4 cup shredded cheese (mozzarella, cheddar, colby jack, parm etc… mix and match)

1.5-2 cups almond flour (I tend to go a bit more on the AF.  We love THIS)
1 tbsp baking powder (We use THIS) OR 1/2 TBS of Baking Soda for a super fluff!
Seasonings to your liking (Garlic, salt, everything but the bagel seasoning!)

Last night I was tired of all my same ole same Keto dinner options and was craving something FRESH and delicious!  Then I did what I do best and started throwing a TON of delicious ingredients and came up with this AMAZING dish!

It is even HUSBAND APPROVED!!!  And since the base is a combo of delicious veggies, that is a HUGE HUGE compliment!  (He is NOT a big fan of riced cauliflower!)

What you will find out about me is that I will take a recipe base of combo and make it my OWN.  SO know that with this dish, your creativity is endless!  Choose a meat and veggie combo and HAVE FUN!

We loved the bright flavors of the chopped bell peppers and diced tomatoes! The summer sausage was savory and complimented the flavors so nicely. I am excited to hear what you come up with and throw together for your own flavorful dish!

INGREDIENTS
Serves 2-3 people depending on portion size. Estimate what you need for your serving and macronutrient needs. Macros are not calculated for this recipe

2-3 TBSP Butter
3TBSP Cream Cheese
2.5 Cups Riced Cauliflower
1 large Red/Orange/Yellow Bell Pepper (Not green for taste)
3 Large Sausage Links (Polish, Kielbasa, summer sausage works)
1/4-1/2 Diced onion
1-2 TBSP Chopped Garlic
Salt and Pepper to taste

Top with sliced avocado, a sprinkle of cheese and 2-3 cherry tomatoes. 

DIRECTIONS

-In large saucepan, sautéed riced cauliflower in butter Med/Med High till soft. (Roughly 5-10min. Add water to soften if frozen and cook 5 additional min).
-Add salt/spices, garlic and onions to mixture while cooking. 
-While cauliflower is heating, dice up your peppers and sausage. 
-Sauté sausage in separate pan if you desire it to brown. Otherwise let alone. 
-Once cauliflower is soft and well cooked through, add cream cheese and let melt. 
-Add peppers and sausage and cover, stirring every few minutes till peppers are slightly soft and sausage is warm. (Roughly 5-8 minutes)
-Scoop into bowl and garnish with diced avocado, cheese and cherry tomatoes. 
-Enjoy!!!  This would be DELICIOUS with shrimp, chicken, salmon etc!!  

Perfect dish to transition to spring and can be made into a HUGE batch to store in fridge!
