Yes my friends, you heard me right! STUPID EASY (coconut flour) BAGELS!!!! Best part is…No melting required! (All the praise hands go UP!) Many of you asked for an alternative to almond flour since you have allergies or sensitivities to tree nuts and I finally whipped some up.  YALL. OMG they are SO DELISH! The coconut flour is slightly different in the overall traditional bagel-y taste but the texture came out pretty darn perfect. It has a cheesier texture which I really have come to love (like it pulls apart more when heated) and has fewer calories.  Win win in my book! These would be absolutely incredible as a sweeter bagel due to the hint of coconut and would make the most perfect PIFFLE! (Not sure what a PIFFLE is!?  Make sure to pop on over to check out all the savory waffle magic!!) I have made this recipe quite a few times and its so simple and satisfying. Super excited to have you try it out! If you have a tree nut allergy and cannot cook with almond flour, this is such a fabulous alternative that is equally as delicious. When you are baking with coconut flour, remember this easy ratio to transform most recipes into delectable goodness!  For every 1 cup of almond flour (or GF baking flour) sub 4 TBS coconut flour and add 1 extra egg. Its that easy!

INGREDIENTS:
(Makes 6 large bagels or 8-9 small)
MACROS per bagel: 157 calories. 9.8 fat. 4.3 total carb/2.6 NET CARBS. 14.3 grams protein

2 cups shredded mozzarella
3 eggs
4tbsp coconut flour
1/2tsp baking soda
Salt & Seasoning to taste

DIRECTIONS:

Preheat oven to 400
Coat non stick BAGEL TIN (this tin linked is our FAVE!!) with coconut oil or olive oil to prevent sticking
Portion and place batter in tins and pat down to form. (I use a plastic bag to keep my hands clean!)
*If you don’t have a bagel tin, form them yourself by hand on parchment paper or make into rounds.
Bake for 12-14min till tops are golden brown!

Store in airtight container in fridge for up to a week!

Perfect in the toaster as well!!
