Stupid Easy KETO Taco Pie

Apparently all my KETO peeps really really LOOOOOOOOVE some stupid easy taco pie!

And honestly, I cannot blame you!

The base of this recipe is so versatile.  My sister and I have played around with a broccoli chicken cheddar pie, lasagna pie, pizza pie and more simply by changing up the meat and spices!

We modified this recipe from the lovely ladies over at Simply So Healthy and LOVE what they are doing!  Way to go ladies!

INGREDIENTS:
-1 pound of ground beef
-1 packet of taco seasoning 
-Salt to taste
-4 large eggs
-2/3 cup heavy whipping cream
-1/2 cup diced onions OR 3 stalks diced green onion. Both are great together 
-1/4 cup salsa
-1 cup shredded cheese. Additional 1/3-1/2 cup for topping.
-3/4 cup almond flour

DIRECTIONS:

-Preheat oven to 350 and use butter or coconut oil spray to grease 9′ pan OR muffin tin pan for mixture. 

-Brown ground beef (or other meat you are using) until cooked through. I love to add some diced bell peppers and onions into the meat for extra flavor. Drain excess grease and place meat back in pan. Add taco seasoning and cook for a few minutes till well included.  Set aside to cool for 10-15min. 

-In mixing bowl, mix together eggs and heavy cream till smooth.  Stir in onions, salsa, 1 cup cheese, and almond flour.

-Add ground beef to mixing bowl and stir well. Texture WILL look soupy. Perfect!

-Pour into 9inch pan or muffin tins and top with remaining shredded cheese.  bake for 35-45min (30-35 for muffins)

-Remove when top is bubbly brown and let sit 5 minutes before serving!

-Perfect to top with sour cream, salsa and guacamole!!  DEVOUR AND ENJOY!!!

Yes my friends, you heard me right! STUPID EASY (coconut flour) BAGELS!!!! Best part is…No melting required! (All the praise hands go UP!) Many of you asked for an alternative to almond flour since you have allergies or sensitivities to tree nuts and I finally whipped some up.  YALL. OMG they are SO DELISH! The coconut flour is slightly different in the overall traditional bagel-y taste but the texture came out pretty darn perfect. It has a cheesier texture which I really have come to love (like it pulls apart more when heated) and has fewer calories.  Win win in my book! These would be absolutely incredible as a sweeter bagel due to the hint of coconut and would make the most perfect PIFFLE! (Not sure what a PIFFLE is!?  Make sure to pop on over to check out all the savory waffle magic!!) I have made this recipe quite a few times and its so simple and satisfying. Super excited to have you try it out! If you have a tree nut allergy and cannot cook with almond flour, this is such a fabulous alternative that is equally as delicious. When you are baking with coconut flour, remember this easy ratio to transform most recipes into delectable goodness!  For every 1 cup of almond flour (or GF baking flour) sub 4 TBS coconut flour and add 1 extra egg. Its that easy!

INGREDIENTS:
(Makes 6 large bagels or 8-9 small)
MACROS per bagel: 157 calories. 9.8 fat. 4.3 total carb/2.6 NET CARBS. 14.3 grams protein

2 cups shredded mozzarella
3 eggs
4tbsp coconut flour
1/2tsp baking soda
Salt & Seasoning to taste

DIRECTIONS:

Preheat oven to 400
Coat non stick BAGEL TIN (this tin linked is our FAVE!!) with coconut oil or olive oil to prevent sticking
Portion and place batter in tins and pat down to form. (I use a plastic bag to keep my hands clean!)
*If you don’t have a bagel tin, form them yourself by hand on parchment paper or make into rounds.
Bake for 12-14min till tops are golden brown!

Store in airtight container in fridge for up to a week!

Perfect in the toaster as well!!

Yea… thats a Keto Bagel Breakfast sandwich.
It is everything you have hoped and dreamed of.

TRUST ME.

If you’ve been around for a while, you know that my hubby and I have been perfecting our “Stupid Easy Bread Rounds” (SEBR) recipe and it is a game changer in the Keto community. I have had SOOOOOOOO many of you say that it was THIS very recipe that kept you in the low carb lifestyle and my heart couldn’t rejoice more.

Because lets be honest.
WE MISS BREAD.
And bagels…

Mmmmmm. Bagels.

We had been making the bread rounds for over a year and then one beautiful day I was strolling the aisles of Marshalls with my sleeping newborn and I came across THESE donut tins and everything changed.

I went home and whipped up a yummy brownie recipe because I wanted to use these magical tins!  They were… ok…

As the tins sat on the counter to be washed, an idea struck me.

What if I used these for BAGELS instead of donuts and created a fun alternative to the bread rounds!?  OMG THIS CHANGES EVERYTHING!

I whipped up a small batch of my SEBR and mushed them in the tins, placing them in the oven for a quick and snappy 10 minutes… and the rest my friends is HISTORY.

I eat them ALL. THE. TIME.

Perfect for sandwiches of ALL kinds!  Breakfast, lunch and dinner… They even make fabulous mini pizzas for a quick meal. I’m serious when I say these are GAME CHANGERS!  Plus you can have TONS of fun with the ingredients and toppings!

My FACEBOOK community shares their creations all the time with me and some of the faves are Jalapeño Cheddar, Trader Joes Everything But the Bagel, Cinnamon “Sugar” and more!  The options are as endless as your imagination!!

The best part is they clean up so easy out of the tin and take NO TIME AT ALL to prep!

So here is my recipe to make 12 large bagels

INSTRUCTIONS
Preheat oven to 400
Spray tins with cooking spray (We use this coconut oil spray)
Mix all dry ingredients first THEN add eggs!
Flatten mixture evenly into tins (I use a sandwich bag to keep my hands clean)
Bake for 10 minutes if you want then slightly underdone to pop int he toaster
Bake for 12ish minutes for a more crisp texture

Store in air tight container for up to a week in the fridge!

INGREDIENTS
4 cup shredded cheese (mozzarella, cheddar, colby jack, parm etc… mix and match)
4 large eggs
2.5 cups almond flour (I tend to go a bit more on the AF.  We love THIS)
1 tbsp baking powder (We use THIS) OR 1/2 TBS of Baking Soda for a super fluff!
Seasonings to your liking (Garlic, salt, everything but the bagel seasoning!)

Carb totals below are per bagel!
5.6 TOTAL carbs
3.1 Net carbs

Well, yall have asked for this recipe over and over so I finally buckled down and got it up on a blog post! NEW MOM WIN!!! But seriously, if you haven’t tried this recipe, you are in for a HUGE treat! And did I mention it is EASY??? Like stuuuuuupid easy. I’ve had so so so many of you comment that when you started KETO you were missing your bread something FIERCE. And friend, let me tell you I WAS THE SAME WAY. There were so many recipes out there that were SO SO but something was always off… too complicated to make.  Texture not right.  TOO EGGY.  You catch my drift! So the hubby is the one who actually came up with the base of this recipe and we have been fine tuning and tweaking it ever since!  We were huge fans of the Fathead pizza dough and loved its versatility but to be honest, I couldn’t quite get the whole “melting everything together” and not get SO frustrated with the texture and process… So we rarely made it! BUT THIS RECIPE WAS A GAME CHANGER!  It takes just minutes to whip up and you will have the most delicious, decadent, delightful bread round, biscuit or pizza base EVER! We flatten it out to get a bread round shape OR you can leave it in a ball for a delicious, quick and easy biscuit!  Trust me, this recipe is SO much fun to work with!!  We even experimented with making a sweet biscuit/scone as well as piggies in a blanket and it is POSSIBLE!!!  oh so yum and stuuuuuupid eeeeeeasy!!!   Please leave me a comment below and let me know your favorite way to make your KETO bread STUPID EASY 🙂   STUPID EASY BREAD RECIPE 2 cup shredded cheese (mozzarella, cheddar, colby jack etc… mix and match) 2 eggs 1.5-1 3/4 cup almond flour (I tend to go a bit more on the AF.  We love THIS) 1 tbsp baking powder (We use THIS) OR 1 heaping TSP of Baking Soda for a super fluff! Seasonings to your liking (Garlic, salt, everything but the bagel seasoning!) Mix together, flatten out on parchment paper and bake at 400 for 8-12min till edges are crisp! I love to double or triple this recipe as a perfect meal prep! *IF DOUBLING RECIPE I like to add 1 extra egg per double. You can use this base for just about ANYTHING!!  We loooooove how these turn out in our favorite BAGEL BAKING TINS for the most amazing texture and perfect sandwich addition to your meals. Drop as biscuits or in WHOOPIE PAN for discs. It is also delicious as FRY BREAD!  Mix it up, toss some butter in a hot skillet and smash and fry till crispy. Oh my word y’all this is SO DANG GOOD! Get creative with the base as well!!  If you want something sweet, you can use all mozzarella cheese as use Swerve or Erythritol and cinnamon to make a sweet scone like treat!
