My journey to healthy living has been long and often lonely, but yesterday I posted that I started juicing a week ago and got a HUGE response from so many friends! My in laws gave us a Nutribullet for an early Christmas gift, and I began using it for 2 meals a day. Crazy thing is I am down a dress size, no longer bloated, my headaches have decreased, I am almost completely off Tylenol and caffeine, I’m sleeping better and my blood sugars are AMAZING! I am a happy girl indeed!
I decided to put some of the details that were asked in the post, yet as I started, I think this will become a mini series on gluten free living, detoxing, juicing and how to naturally shift to a healthy lifestyle.

In a nutshell, I have a severe gluten intolerance and I am in the process of shifting my ENTIRE life around to try and get my health back into a better balance. (Easier said then done my friends) I want to make sure that everyone understands that what I explain here on this blog is from my own personal research, my own personal testimony and shared experience. With that said, I want to share a bit of my childhood, so that you understand the reasond I am so personal and passionate with my health and choice of eating. I tend to be wholehearted and extreme in anything I do, so I hope you find my zeal hope-filled and inspiring!
To understand me a bit, I was diagnosed with type 1 diabetes at the young age of 3. I’ve been in and out of the hospitals growing up, with a number of life threatening comas which should have taken my life. The Lords hand was on me, and I see that He saved my life to touch and impact others with His life. I’d like to share vulnerably a bit our my own journey and hope that it meets you wherever you are today.
I started “sneak eating” as early as I can remember. As a diabetic, you are told what you can eat and how much you are allowed to consume at certain times of the day. Yet my sweet little sister was allowed to have all sorts of yummy and decedent food that I “wasn’t allowed” to have, and to my adolescent brain, that wasn’t fair.
I became obsessed with food. Addicted. Consumed. It was often times all I could think of. I would strategically sneak into the kitchen when my mom was out of the room and consume as much as I could in a short amount of time. That lead to constant upset stomach aches, high blood sugars and a mental battle that would follow me into adulthood.
Fast forward 25 years or so and you find me at the ripe age of 28. Migraines were weekly battles and my sugar addiction was out of control. You see, the pesky thing with sugar is that once the cycle starts, it is vicious, aggressive, and near impossible to control. I was about to move to Atlanta Georgia for a semester of school, and before I left, my chiropractor suggested getting off all sugar, grains and gluten. (Gluten, what the heck is that? And how will i survive without SUGAR!)
I decided to try it, seeing as no amount of Tylenol could even remotely touch the headaches. Within the first few weeks I experienced so much energy I was floored to keep going. Just 3 months into living gluten, grain and sugar free, I was 22 lbs lighter, walking with nearly NO headaches and sleeping better than I had in years. I ate a diet of clean & lean animal protein (organic when I could afford), nutrient rich organic vegetables and limited amounts of low glycemic index fruits and berries. It was INCREDIBLE!
I moved back home to finish my last semester of school and life happened FAST when I quickly became engaged to my love & best friend Justin. Throughout that season of graduating college with my him living and serving an orphanage in Brazil, planning a wedding and cross country move, I slipped from eating as clean as I once did and fell back into old habit patterns. We arrived in Atlanta in the Fall of 2012 and a few short months later I was nearly bed ridden with sickness while doctors couldn’t figure our what was going on. I was fighting migraines again, chronic fatigue, sleep disorders, malaise, brain fog and social anxiety and felt just downright MISERABLE. Weeks turned into months and months turned into almost a year until we figured out the greatest attack against my system was a teensy little thing called: GLUTEN.
Gluten is a protein composite found in foods processed from wheat and related grain species, including barley and rye. Gluten gives elasticity to dough, helping it rise and keep its shape and often gives the final product a chewy texture. (Wikipedia)
At this point we were living almost 80-85% “gluten free”. You know, making sure we “sort of” watched out for it. It made sense to eat ALMOST completely off gluten, but I had never actually researched the affects and symptoms that can come alongside of someone struggling with a gluten intolerance.
The intolerance can be linked with a myriad of symptoms such as:
Autoimmune conditions
Chronic diseases
Skin eruptions, eczema, cold sores, acne
Fatigue
Joint pain
Indigestion
Bloating Gas
Heartburn
Constipation
Diarrhea
Congestion
Anxiety
Moodiness or irritability
Headaches or migraines
When NOTHING else seemed to be working, I had been in and out of meeting with dozens of specialists here in Atlanta and tons of blood work drawn, my husband had the most simple of suggestions one night. He said “well babe, since nothing else seems to be working, what if we just cut out the gluten for a few weeks and see how you feel?”
Made sense to me…
So we did it. But not the 85%. Not even the 96%… NO. We went 100% gluten free. We purged the house. We read EVERY label. We stopped eating out in restaurants (I almost died). And you know what? Within 2 weeks my symptoms had decreased and I was able to function for the first time in MONTHS!!! That’s all it took! No doctor could tell me anything otherwise and as we have now been gluten free for 3+ months, we are never going back.
SO… Why did I share all that??
I want to take the next few posts to develop the understanding and issues that gluten, (sugar, grains, processed foods…) bring. Know that since eliminating it from my diet, so many other symptoms have dissolved, and my body is on its way to healing. Did you know that it takes 7-14 days for gluten to exit your body once introduced, and symptoms of bloating, weight gain, severe stomach discomfort and fatigue can be onset within the hour of ingestion.
Gluten is NO JOKE and not just a “fad diet” gimmick. Even if you don’t suffer from an intolerance like I do, the way gluten is processed in wheat etc these days, most bodies do best in eliminating it from their diet altogether.
SO, that’s a teensy introduction to my journey. It has been long, and I am only in the beginning stages of my healing, but I am on a mission to LIVE as full as I can TODAY. I have struggled with food for my whole life if I am honest, but I know that I am meant to LIVE and LIVE abundantly. At this point I will do whatever it takes to LIVE each day to its fullest. My hope for these posts is where other men and women who are on the same quest for health can come together, share stories, encourage and inspire one another.

We Are big breakfast believers in our house!
Yet on Saturday morning I wanted something warm, cozy and CHEESY.
(Mmmmmmmmmm cheese.)
So I looked through a couple of casserole recipes and whipped up this beauty! (The hubs is already requesting I make it again!)

I affectionately call it my Oooey Gooey Cheesey Breakfast Bake!
So easy and the recipe is so versatile!!!
All the ingredients (except for the cheese) make this recipe Paleo friendly and is a great hearty meal for a cold winter morning.
I chose to include yummy sweet potatoes, veggies, sausage and eggs. AND CHEESE! I love the fact that you could easily swap out bacon, chicken, zucchini, tomatoes, squash, etc! Sky is the limit.
My motto in any sort of cooking is to be flexible and versatile. I rarely follow a recipe to the dot, and always add lots of yummy spices. This recipe will NOT disappoint and is sure to be a family favorite!!
So here we go!
I started out sauteing a mixture of onions and bell peppers.
While those were getting the onions nice and toasty,I chopped up the sweet potatoes and spinach.
Next I boiled the sweet potatoes for 10 min (or until tender) on med high, then drained them one finished.
As the sweet potatoes are boiling, I started cooking the yummy, delicious, smells oh so good sausage!!!
Once fully cooked, I added in the sweet potatoes and veggies, and mixed all up. Doesn’t that look DELISH!!?
After that’s all mixed up make sure you grease your pan with some coconut oil. This way it won’t be permanently plastered to your lovely bake ware 😉
Once everything is ready to go, place the sausage and veggie mixture in the pan and smooth evenly. Then place the egg mixture all over the mix and stirred gently. (I beat the eggs with salt, garlic powder and fresh cracked pepper)
NOW. LETS TALK CHEESE. :)))
Depending on your choice of veggie mixture and favors you choose to season with, get creative on the choice of cheese you use!! Parmesan, Colby, jack or cheddar, GO NUTS!! We chose to use a Colby jack blend and covered the entire mixture with it. Mmmmmm cheeeeeese….. Nom nom nom
Pop it into the over at 350 for about 35-40 min and…
VOILA!!!!! Oooey Gooey Cheesy Breakfast Bake!!!
Well there you have it friends!!! Healthy for a low-carb lifestyle and PERFECT for weekends or CHRISTMAS MORNING!! So simple & easy to make and you’ll have plenty of leftovers!

Normally I wont post 2 recipes a day, but this one is TOO GOOD to pass up!
ALMOND MEAL BREADED BAKED CHICKEN!!! It’s so easy to make and is my husbands FAVORITE!
We paired it with sautéed garlic green beans… YES LORD! It was the perfect post workout dinner!
Ingredients:
4 Chicken Thighs
2 cups Almond Flour
2 eggs
2-3 TBS spicy brown mustard
1 heaping TBS garlic powder
1.5 TBS of your favorite seasoning (We used a Caribbean Jerk! yummmm)Salt & Pepper to taste
***Disclaimer: I am a seasoning FREAK! I always feel like you can never have enough! Go big or go home!
To Make:
-Preheat over to 350-In a separate bowl, mix together eggs & spicy mustard, set aside.
-In large mixing bowl, add all dry ingredients together. (Make sure to mix WELL)
-Dip chicken thighs one at a time into egg mixture, then into dry mixture. make sure to coat chicken GOOD because the almond meal bakes SOOOO NICE! (We always save the extra “bits” till the end because they are the BEST!!!)
-Place your now DELICIOUS chicken thighs in the over, set timer for 30-45 min (until juices run clear) and DIG IN!!!

So I have a pretty severe gluten intolerance… which is OBNOXIOUS because anything yummy, or wonderful or sparkly has gluten. I have been sick for a few months now and I am trying to take my responsibility by what I put in my mouth and body and take care of the temple that the Lord gave me! This is going to be a regular “Clean Eating: Gluten, Sugar & Grain Free” recipe section of my blog 🙂 I am excited to post many of the delicious eats and treats that my husband and I consume on a regular basis, and the fun experimentation of trying out new things!
The reason that I am including grains into my list of BANISHED items is that even though grains are good for you and most people eat them on a regular basis, my body just doesn’t seem to process them very well. Having type 1 diabetes has a lot to do with that, and more often than not, a simple cup of rice will spike me into a high blood sugar… then a headache, then a migraine… so you get the point, NO grains for me!
***DISCLAIMER: I also want to be realistic. Whereas gluten has a direct negative affect on me physically, grains simply make me feel sluggish and lethargic. They are however manageable… So if I am going to Chipotle, by golly you KNOW that I am getting some brown rice as my base! I just had to clarify… because sometimes a girl just needs a plate of NACHOS! Can I get an amen? AMEN! 😉
So that leads me to a quest to come up with yummy, clean, healthy (and sort of healthy) recipes that are gluten, sugar and grain free! In the Clean Eating series, I will post all sorts of recipes that I come up with, and ones that I find and LOVE! If you have a request, please leave a comment and I will get to cooking for you!
Today’s adventure is an inspiration from my mother and husband! Turkey, Ham & Cheese Lettuce Sammies!
My husband loves a good sammie (sandwich!)… and bread… But once he married me, those things couldn’t stay in the house because I WOULD EAT THEM! However, my mother came into town and bought my hubs A TON OF SANDWICH BREAD! We didn’t know what to do with it! After freezing it for 2 weeks, there was one morning where we were running SUPER LATE and I didn’t have any leftovers to send him for lunch… So I grabbed the bread and threw him together a quick sandwich and called it a day!
He got to his break that day, and called me in joyous shouts as to how DELICIOUS his sammie was! I was only slightly jealous and decided that I would figure out how to create a sammie that was Rachael approved!
What I came up with isn’t anything new, but boy oh boy it was brand new to me!
I used romaine hearts for the Sammie Bread, put a bit of garlic herb “Laughing Cow” cheese on the sides, tucked in some turkey, ham and pepper jack cheese, cut up a few cherry tomatoes and smooshed it together like a sammie! IT WAS DIVINE! I seriously inhaled it! Pair that with a Tazo Passion Fruit Ice Tea, sweetened with Stevia and I was in heaven!
Hope you try these yummy, delicious sammies and love them as much as I do!
(The sky is the limit in your ingredients! I think next time I am going to try hummus in it as well!)

RECIPE: Feeds 2 people
4-6 Romaine hearts (dependent on size of lettuce)2TBS of dressing/mayo/cheese/salad dressing- Smooth over lettuce
4-6oz of lunch meat
1-2oz of sliced cheese (I have also tried shredded cheese and works great!)
Chopped veggies of your choice (Tomatoes, Cucumbers, sprouts etc…)
