INGREDIENTS: 

1 (8oz) block soft cream cheese
5 eggs
3/4 cups Almond Flour
Salt and garlic to taste
1tsp baking powder

For sandwich:
AlternaSweets Bbq sauce 
(Or any low carb alternative)
Seasoned Chicken (deli or rotisserie)
Sliced Cheese
Waffle Bread

 

DIRECTIONS:

-Blend everything in BLENDER till smooth
-LET SIT 5-10min. So important!
-Pre-Heat Dash mini waffle iron and use spray of coconut oil per batch.
-Pour roughly 1/4 cup into waffle maker and let cook for 2min (till golden tops)
-Repeat steps for remainder of batter and store in fridge for up to 1 week.
-Batch makes 12-15 mini waffle breads!
 

BBQ Chicken Sandwich:
Take 2 slices of Waffle Bread
Spread 1 TBSP BBQ Sauce on both
Layer chicken and cheese
INHALE and ENJOY!

INGREDIENTS:

1lb raw ground beef

1 cup shredded cheese

1/4 cup bacon pieces

2 Tbsp Low Carb BBQ Sauce

OR 1 tsp bbq dry rub

DIRECTIONS:

-Preheat oven to 400
-Mix cheese and bacon bits in small bowl. 
-Mix together raw ground beef and BBQ sauce in small separate bowl.
-Mold beef in cupcake tins (I love using these parchment paper cups)
-Place heaping mix of cheese/bacon mixture in each “burger boat”
-Cook for 15 min
-Remove, drizzle more BBQ sauce or ranch dressing and DEVOUR

Super amazing, low low carb and easy dinner to whip up!!!

Yes. Thats right. Pulled Pork on a WAFFLE!

Hear me out before you gasp at such a claim! You know how people love the combination of sweet and savory!? Carmel cheddar popcorn or chicken and waffles? THIS amazing combo is just like that but BETTER because I found the perfect Low Carb BBQ Sauce that I can’t wait for yall to experience! (And y’all have been asking me FOREVER to find the best… and trust me… this is the BEST!)

Before we get to the super simple way to make the pulled pork waffles, I want you to meet my new friends at ALTERNA SWEETS and get to know their amazing low carb sauces!  I love that they are made with our beloved, keto friendly STEVIA!  I have tried to many other brands that are low carb but I am super picky about my ingredients and really don’t personally prefer the taste of Sucralose or some of the varieties of stevia that leaves that strange aftertaste!. 

So I searched and hunted and finally found my beloved new friends at AS!  I tried the Smokey BBQ sauce and Spicy Ketchup and y’all its D E L I S H. My husband is VERY particular and VERY picky about his sauces and he said, (and I quote), “Even if I didn’t eat Keto, I would 100% eat this BBQ sauce… this is everything I have been waiting for!!”

There you have it. Honest feedback from a very particular BBQ guy. I mean I guess we have reason to be picky since we met and married in Kansas City.  Its like the BBQ capitol of the world in our opinion HA HA!!  This week alone I have made the Pulled Pork waffle from this post, BBQ wings and we have drizzled it on Waffle Bread sandwiches too for a wonderful and flavorful KICK!  

Obviously we are obsessed…
I mean its been 3 years without a true BBQ sauce, so we are going BIG!

One of the hardest things on Keto has been to find a sweet yet SMOKEY BBQ sauce that isn’t loaded up with sugar! Some sauce you can get at the store or at a restaurant can be 22-25 carbs PER 2 Tbsp… I mean who ever ever ever only uses 2 tablespoons!? But AlternaSweets has created some of the BEST, thick and hearty sauces with Stevia and they are 2 net carbs per serving!

As always, we want to make sure we are watching our portion sizes with anything Keto we consume.  Because let’s be honest, even too much of a good thing can be BAD!  Meaning, don’t pour half a bottle on your ribs next time you make them… even though its low low carb!

I loved that the richness of the sauces were bold enough that we didn’t need too much and could really keep our carbs LOW!  I think I used about 1.5-2 Tbsp on the waffle and it was PERFECT!

This waffle recipe is really just a thrown together simple meal idea that we had 2 nights in a row. It was seriously THAT GOOD. If you prefer a crispy bread as a base, check out the FB live video i did a while back for using the PIFFLE (Stupid Easy Bread Base) instead of the WAFFLE BREAD. Both are so delicious and so versatile!

I pulled a “tired mom card” this week and got the Pre Pulled Pork from Sam’s and it was PERFECT for this quick and easy meal! But any shredded meat would do!  You could shread some rotisserie chicken, make some pulled pork in your Instant Pot or even used leftover ribs! Anything that you would want to drizzle BBQ sauce on will work PERFECT!

Here are the basic instructions for the Pulled Pork Waffle and the multiple variations!  I would love to hear below in the comments what you came up with and how much you love the sauce!

LOW CARB PULLED PORK WAFFLE:

For the waffle base, there are a few amazing choices! Click on the links to find your desired texture!

-Waffle Bread HERE for soft and moist base
-Piffle Bread HERE for crispy and crunchy

If you don’t have a waffle maker, don’t fret!

-This FLATBREAD RECIPE will work amazing
-The Stupid Easy Bagel Recipe is also a classic!

For the Meat options, there are so many choices!

We ended up using pre shredded Pulled Pork from Sam’s but you could easily make it in your Instant Pot!

IP PULLED PORK:
-3lbs boneless pork roast cut up into cubes
-Salt and garlic to taste (Liberal amounts in my opinion!)
-1 cup chicken stock

DIRECTIONS:
-Season cubed pork with salt and garlic and set aside. 
optional: you can sear the pork in a skillet to brown.
-Add chicken stock to bottom of Instant Pot
-Add meat to liquid
-Close lid and seal shut
-Cook on manual HIGH pressure for 40 minutes
-Once time is up, allow to release naturally (10-15min)
-Once release is finished, remove pork and shred with forks

PUT IT ALL TOGETHER:
Place 1-2 waffles on a plate per person
Once meat is shredded, portion about 1/3-1/2 cup of pork per waffle, per person.
Add 2-3 TBSP AlternaSweets BBQ Sauce per waffle!

Did someone say low carb, double chocolate brownie for the win!!? I think I did!!

Honestly yall I really don’t know how these things happen to me. I get so inspired in my kitchen and never ever check my ingredients to make sure I have everything.

It seriously happens ALL. THE. TIME. 

And then I get these accidental creations that are SO GOOD.
Both you and the hubby benefit in my opinion!
I mean seriously… everyone loves a low carb brownie!

SinceI was out of baking chocolate in all forms, this is where I just haaaaaad to substitute Choc Zero chocolate squares because I was out of baking chocolate… boo hooooo hoooooo LOL!

But in all seriousness, it turned out WAY better than expected! I whipped up some cream for a topping then drizzled it with Choc Zero’s chocolate syrup (which if you have yet to try, Im not even sure we can still be friends. Its thick like fudge and SO SO SO GOOD!)

Ok ok back to the beauty of this low carb brownie!  If you don’t have the chocolate squares, you can stick to baking chocolate or even dark chocolate baking chips. Basically you just want lots and lots and lots of chocolate to make this AHHHHHHMAZING!

This is such a good treat for birthday parties, special occasions and all things pot luck to impress the masses!  Its decadent so a little little bit goes a long way!!!

INGREDIENTS:

1/2 cup Butter
4-5 Choc Zero Chocolate Squares 
     OR 4oz semi sweet baking chocolate
1/4 cup Brown Sugar Swerve Sweetener
1/4 cup Erythritol granular sweetener
1 1/2 Tsp Vanilla Extract
2 Eggs
1 1/2 cups Finely ground Almond Flour
1/2 Cup Lilys Low Carb Chocolate Chips
1/2 Cup chopped walnuts or almonds (optional)  

DIRECTIONS:

-Preheat oven to 350. Grease 8 inch baking pan with butter or coconut oil. 
-Melt butter and Chocolate Squares over medium low heat 
-Slowly stir in both sugars and add vanilla. Set in fridge to cool for 5-10min. 
-Once cool, add eggs and mix well (Hand mixer or KitchenAid works well for this)
-Stir in flour and mix well. (Almond flour won’t toughen if you over mix.) 
-Stir in chocolate chips and additional nuts
-Spread in baking pan and bake for 30-32min till center cooked all the way through. 
-Let cool on counterforce 60min or in fridge for 30 before cutting. (Cut into small squares. Should yield 16-20 small brownies)
-Top with low carb ice-cream, homemade whipped cream or Chocolate Zero Chocolate sauce (And don’t forget to use code RACHAELDEE for 10% off!!)

*To make a whipped cream topping, do a quick google search!  I wasn’t a huuuuuge fan of the one I made and never want to share anything with you till its PERFECT… So if you have some good whipped cream, please send it my way!! xox
*I do not have macros calculated as you might use different ingredients and size you choose to cut. To lessen overall carbs, you can omit chocolate chips 
completely and it will still be delicious!   Each brownie should be roughly 2-3 net carbs.

Keto Surf & Turf: Steak and Shrimp

Simple, delicious keto/low carb/carnivore surf and turf made with my favorite selections of steak and shrimp!!!

I have recently fallen LOVE with cooking steak in my AIRFRYER and love the ease and convenience it gives me when I impressed for time!  I was so intimidated by adding yet ANOTHER keto kitchen contraption to my list, but this one for sure does not disappoint. 

In this recipe, the instructions will use the cooking method of the air fryer but you could easily replace that with a cast iron skillet, outdoor grill or oven method. I just love how tender and juicy the steak stays when cooked this way and am 100% convinced this is a KETO KITCHEN MUST HAVE!!!

This recipe is VERY simple. You can season your meat in any way imaginable. My favorite two ways are as follows: 1- Salt/Pepper & Garlic (lots and lots of garlic!) 2- Any kind of low carb/no sugar dry rub (Bbq is a big favorite of mine, just read your carb counts on the label)

For the shrimp you can cook one of two ways. 1- (My preferred method) Sautee on med low in lots and lots of butter with your seasoning of choice. We used the cast iron skillet and they turned out incredible!  2-You CAN cook them in the air fryer if you would like.  I prefer the way they soak up the butter in the skillet and cooking both the steak and shrimp at the same time. But if I wanted the fried taste, I would cook the shrimp first in the air fryer and then the steak after. Be cautious to NOT overcook the shrimp if using the air fryer though!

Now I will say you need to do your researce for what size fryer you need. The one I have currently is a bit on the smaller size and my goal is to get an XL one on the next Prime Day! It fits 2 large ribeyes perfectly or 3-4 smaller thighs, but if you want to get a bunch of meat cooked up for the family, make sure you get a bigger one.

On the flip side, if space is an issue, they have some adorable compact versions that still get the job done and your meat cooked to perfection!  I am so serious… moist on the inside and the perfectly cooked crisp on the outside. OMG.

INGREDIENTS:

2-4 large, marbled ribeye steaks (depending on size of fryer you might have to cook in batches)
Salt and pepper (other seasoning to taste)
1/4tsp olive oil
Butter (optional)

15-20 Medium to large shrimp
3 TBSP Butter
1/2 Tsp seasoning (Butt Rub etc)
Salt to taste

 

DIRECTIONS:

 -Bring steaks to room temp, pulling from fridge 1 hour prior to cooking
-Coat steaks with olive oil, then season steaks liberally with salt, pepper, garlic etc -Preheat Fryer to 350/375 degrees (higher temp if steaks are thicker)
-While fryer is heating, start cooking your shrimp: Melt butter in med high heat and add shrimp. Turn to low once you bring to simmer. Add seasoning and simmer on low for 5-8min till fully cooked. 
-Once fryer is heated, place inside fryer
-Set timer for 10-12min depending on desired cook temp (We do 12m and get a medium cooked steak. You will learn your fryer and temps and cook times may vary)
-Flip steaks halfway through
-Remove from fryer and allow to sit for 3 to 5min before serving
-Slather with butter, cooked shrimp and ENJOY!!!

 

I hope you LOVE this simple recipe as much as we do around here!  Its becoming a near weekly request from my hubby and I looooooooove eating steak, so I don’t mind one little bit! Mmmmmm. Steeeeeeak.
