Keto Avocado Toast

This week on the blog we have been exploring ALL THINGS bread and sandwiches so I thought it would be fun to show you how I make my Keto avocado toast 2 different ways with the best tasting keto bread EVERRRRRRR!

Both of these recipes are SO simple and stupid easy and are some of the most delicious keto breads that involve absolutely NO MELTING!!!  Both have a totally different texture but can be prepped and cooked in record time!  Plus they store in the fridge or freezer and can pop right into the toaster!

I love to combine a few different aspects into my avocado toast and encourage you to get creative! Start out with a good base of butter or cream cheese and then get creative with adding things like bacon, sliced cheese, egg salad, chicken salad, salami and all sorts of seasonings! Then once you have a few fun additions, slice up that beautiful avocado and smear or spread it over the toast! PERFECT. KETO. MEAL. 

When my son was first born and I needed all those goods fats in my system, I used to eat these for breakfast EVERY morning!  Now I love to eat them for lunch or even for a quick snack on the go!  I love the taste of both breads in a TOASTER, so if you don’t have one, you can check out my favorite HERE!

So here are my 2 FAVORITE bread recipes for your perfect plate avocado toast! PLUS a super fun bonus recipe that is a keto community FAVORITE!!!

Avocado Toast Bread Recipe #1:
STUPID EASY BAGELS/BREAD

INGREDIENTS 

4 cup shredded cheese (mozzarella, cheddar, colby jack, parm etc… mix and match)
4 large eggs
2.5 cups almond flour (I tend to go a bit more on the AF.  We love THIS)
1 tbsp baking powder (We use THIS)
OR 1/2 TBS of Baking Soda for a super fluff!
Seasonings to your liking (Garlic, salt, Bagel Seasoning)

DIRECTIONS 

Preheat oven to 400
Spray bagel tins with cooking spray (We use this coconut oil spray)
*You can mold the dough into circles if you don’t have a tin
Mix all dry ingredients first THEN add eggs!
Flatten mixture evenly into tins (I use a sandwich bag to keep my hands clean)
Bake for 10 minutes if you want then slightly underdone to pop int he toaster
Bake for 12ish minutes for a more crisp texture
Store in air tight container for up to a week in the fridge!

Avocado Toast Bread Recipe #2:
CREAM CHEESE FLATBREAD

INGREDIENTS

-1 block softened cream cheese
-5 eggs
-3/4 cup ALMOND FLOUR
OR 3 TBSP Coconut Flour

-1tsp baking powder
-Dash of salt

This ELECTRIC GRIDDLE is amazing for all of your pancake and flatbread needs!! The unit can be detached from heat control and placed in dishwasher! WIN WIN!

OR pour this batter into a DASH MINI WAFFLE IRON and experience the fluffiest, moist, delicious “keto bun” you’ve ever tried… Plus the waffle iron can be used for a PIFFLE!  
In our humble opinion, this is the far superior way to make the cream cheese recipe!

DIRECTIONS

-Blend everything in BLENDER or food processor till smooth.
-LET SIT 5-10min. So important!
-Heat skillet to med/med high and use ghee or coconut oil per batch
-Allow bubbles to form and flip once golden!
-Let flatbread cakes cool in fridge for 30-60min before building sandwich
-Slather mayonnaise, butter or any spread of choice on flatbread
-Layer cheese, lunchmeat and more cheese and INHALE!

BONUS RECIPE:
Avocado Toast on a PIFFLE

You will need a waffle iron for this one… and if you don’t yet have one in your keto kitchen, you will surely be glad you did!  We love THIS BRAND because it has removable plates.
Trust me, it makes clean up SO MUCH EASIER!

INGREDIENTS & DIRECTIONS:

1 cup cheese, 1 egg, 1/2 cup almond flour

Plug in and turn on waffle iron
Mix together ingredients in small bowl and set aside
Spray waffle iron with coconut oil or avocado oil
Place batter in waffle iron and close lid
Cook till crispy, remove and add toppings!

This recipe base can truly be made into any crispy concoction your heart desires!  The pizza version is so close to a traditional deep dish pizza and has that CRUNCH you have been missing!

Keto Cream Cheese Flatbread Sandwich

This amazingly simple keto cream cheese flatbread sandwich has been a family favorite for years now! If you haven’t yet tried this, you’re in for a real treat! 

Whats FUN is that this is a savory version of my CREAM CHEESE PANCAKES and one of the recipes that I used ALL. OF. THE. TIME. when I first started eating Keto 3 years ago!

You can really have some creative liberty with the seasonings you use since the base is so rich and yummy!  I love to use the BAGEL SEASONING that you can get everywhere now (Trader Joes is my all time fave of course) or spice it up with some Italian seasoning, garlic, onions… YOU NAME IT! 

You can also cook this batter in the DASH MINI WAFFLE IRON (if you don’t have one yet, this is one of my Keto Kitchen MUST HAVES and so tiny and adorable!) The texture will be thicker and different than a traditional flatbread BUT really good!  

What I looooooove about these as “pancake shaped” or a flatbread look is how moist they are. I don’t know if you ever smoothed bread when you were younger but it made it into this moist texture and I loooooooved it growing up LOL 

Play around with what consistency you enjoy best. This can be 100% flour free or you can add or decrease the flour amounts as you want. Almond flour is my favorite to bake with but if you need coconut flour, try 2-3 TBSP in the mix. The texture WILL be flat but I promise you it is SO GOOD!  If its a bit too eggy for you, you can decrease by 1 egg AND add a bit more almond flour!

These are SO perfect for summer lunches, trips, beach days and anywhere you need a good fat packed protein lunch on the go!  We have taken these hiking and they are SO good and satisfying. Perfect for lunches at home too 😉

I don’t currently have macros calculated- but if you want to do the math, they are VERY low per flatbread (Roughly under 1 depending on how large a cake you make)! Plus you can decrease almond flour to lower carbs or omit completely. (More of a crepe like texture when flour is omitted)

Low Carb BLUEBERRY Cream Cheese Pancakes y’all.

If you are missing some yum pancakes on a Saturday or Sunday morning then these FOR SURE will not disappoint! Plus we are on a HUGE blueberry kick right now and these turned out so so so yummy!!!

Plus they are OH SO stupid easy! Imagine the simplicity or my STUPID EASY BAGELS or BREAD ROUNDS and instead of using shredded cheese, we are using cream cheese!

But in my opinion, the best part is that you DO NOT have to melt anything! That for me is the most frustrating part of some KETO recipes! Don’t get me wrong, the texture is GREAT but just too much work for me lol

OK. Back to the yummy blueberry cream cheese pancakes!

I know there are some INCREDIBLE recipes out there, this is just my accidental twist on some of them I have seen over the years. And yall. This is a DECADENT!
Plus it is NOAH approved. Only the highest seal of deliciousness and amazing flavor 😉

INGREDIENTS:
*This is a DOUBLE BATCH recipe. You can EASILY cut this in half 🙂
2 blocks soft cream cheese
10 eggs
1.5 cups ALMOND FLOUR
1/2 cup SWERVE (or low carb sweetener of choice)
1/4-1/3 cup fresh or frozen blueberries (or drop 2-4 berries per cake)
1tsp baking powder
Dash of salt

This ELECTRIC GRIDDLE is amazing for all of your pancake and breakfast needs!! The unit can be detached from heat control and placed in dishwasher! WIN WIN!
Or make these into mini “eggo” sized waffles with the DASH MINI WAFFLE IRON. 

DIRECTIONS:
-Blend everything in a BLENDER or food processor till smooth.
-LET SIT 5-10min. So important!
-Heat skillet to med/med high and use ghee or coconut oil per batch
-Fold in blueberries to batter OR when you pour batter onto pan, drop 2-4 berries per cake. If you premix, you will get the flavor of the berries mixed in much better!
-Use 1/4 measuring cup for each pancake and drop onto skillet.
-Allow bubbles to form and flip once golden! (2-3min per side)
-Slather with butter and ChocZero Maple Syrup and ENJOY!

Yes my friends. You heard me correctly. Stupid Easy KETO Blueberry Bagels. 

I mean, LOOK at that texture!!!  It looks like bread, right!!?

R I G H T!!!

And the best thing about all of the stupid easy recipes is that there is
NO MELTING REQUIRED!  
Thats right friends!
No melting and mixing and getting almond flour and egg everywhere!  
Just simple, satisfying yums that cook up in minutes!

Back to those beautiful bagels up top… Mmmmmm. blueberries!

This is a perfect sweet treat for weekends, special breakfast dates or… well ANY DAY!  You can use either fresh of frozen blueberries depending on the season and I’m sure you could even make a razmattazzzz RASPBERRY rendition! Omg I might have to go make those RIGHT NOW!

This recipe is slightly different than my original bagels so if you are familiar with that cook time and temp, make sure you adjust accordingly. This is going to give you a FLUFFY, decadent, slightly sweet bagel that my husband said almost tasted like a donut. I will take that as a HUGE compliment from Mr Sweet Tooth himself!

Slather this with butter or whipped cream cheese and INHALE!  

I hope that you enjoy these as much as we did!  I will get a Coconut Flour recipe posted as well, but if you need to conversion, its just 2 TBSP of coconut flour for every 1/2 cup of almond flour 🙂

INGREDIENTS:

-2 cups mozzerella cheese
(Mild and blends flavors well)
-1/2 cup almond flour
OR 2 TBSP Coconut Flour

-3 TBSP Swerve confectioners
-1/2 tsp baking soda
-1/4 cup blueberries
-2 eggs

DIRECTIONS:

-Preheat oven to 350
-Mix dry ingredients together, then add eggs and blueberries.
-Place mixture in BAGEL TINS 3/4 full
(It will look thin but they will rise!)
-Cook for 15-17min (depending on oven)
-Let cool completly and ENJOY!

This recipe makes 6 large bagels in the tin listed above.
If you have a tin with small with a smaller cavity, you might get 8-9 bagels.

It really is THAT STUPID EASY YALL!

I mean it seriously takes NO time to prep and bakes so fast!  Tops should come out golden brown when cooked to perfection. If you want them a bit more dense, you can sprinkle in a tiny bit more almond flour and cook a minute or two longer. The blueberries do make the dough a bit heavy, so let them cool in the tins completly before you remove them. Store in fridge for up to a week or freeze.

If you don’t have a bagel tin, no worries! I got you covered! Grab some parchment paper or a silicone baking mat (we love theses) and mold them into a circle form at about 1/4 inch high. You might yield 6 large bagels or 8-9 smaller ones. I recommend using a plastic bag over your hand as the dough is very sticky. 

I have purposefully NOT included Marcos since the ingredients YOU use will most likely be different. Just plug into a carb calculator and adjust accordingly. To lessen carb total, replace with coconut flour or decrease almond flour 1-2 TBSP. 🙂

Low Carb Bacon Chicken Salad

Bacon. Chicken. Salad. 

Yall, this was 100% an OOOOOPS recipe yesterday but it was so delicious I just HAD TO share it with you!!

But be warned… its STUPID EASY! 
(Not that you mind right… LOL!)

SO I went to make a traditional chicken salad base with the rotisserie I got at Sams Club!
I was so excited (and starving) and plopped that Chosen Foods mayo in like a BOSS!

I reached in the fridge for the relish and Dijon mustard and discovered I WAS TOTALLY OUUUUUTTTTT. 

LIKE HOW DO YOU EVEN HAVE CHICKEN SALAD WITHOUT MUSTARD?

I almost panicked… Because to me, chicken and JUST mayo did NOT sound all that appealing. 

So I searched and searched my fridge and cabinets and came up with a delicious turn around… enter the scene… BACON. 

ALWAYS BACON. And the famous “Everything Bagel Seasoning”. WINNING. 

I mixed it all up and was craving a little CRUNCH factor that I miss with finely diced apples or cranberries in a traditional chicken salad. Soooooooo I added some slivered almonds to the top and grabed my trusty WHISP parmesean cheese crisps and the entire meal took me less than 5 minutes to prep. I honestly think I inhaled it in the same amount of time and had TONS of leftovers… which my hubby had for dinner. 

DOUBLE WINNING. 

If you dont have the EBTB seasoning, I would just use lots of garlic, salt, poppy and seasame seeds to your liking!  But the one linked above from Amazon has stellar reviews!

It really was THAT EASY yall! And even the 15 month old scarfed some down for a snack this morning.  TRIPLE WIN. 

Do you have a favorite chicken salad recipe!?  Though this was an OOOOPPPPS recipe, I would love to make some other renditions since the boys loved it so much!

-2 to 3 large chicken breasts or thighs
-2 to 3 TBS mayo
-1/4 cup bacon
-1 tbsp Bagel seasoning
-1/2tsp salt (optional)

DIRECTIONS:

-Dice up chicken breasts and toss into medium sized bowl
-Add remaining ingredients and mix thorougly
-If dry, add more mayo
-Enjoy with WHISPS or Stupid Easy Bagels!
