Apparently all my KETO peeps really really LOOOOOOOOVE some stupid easy taco pie!
And honestly, I cannot blame you!
The base of this recipe is so versatile. My sister and I have played around with a broccoli chicken cheddar pie, lasagna pie, pizza pie and more simply by changing up the meat and spices!

We modified this recipe from the lovely ladies over at Simply So Healthy and LOVE what they are doing! Way to go ladies!
INGREDIENTS:
-1 pound of ground beef
-1 packet of taco seasoning
-Salt to taste
-4 large eggs
-2/3 cup heavy whipping cream
-1/2 cup diced onions OR 3 stalks diced green onion. Both are great together
-1/4 cup salsa
-1 cup shredded cheese. Additional 1/3-1/2 cup for topping.
-3/4 cup almond flour
DIRECTIONS:
-Preheat oven to 350 and use butter or coconut oil spray to grease 9′ pan OR muffin tin pan for mixture.
-Brown ground beef (or other meat you are using) until cooked through. I love to add some diced bell peppers and onions into the meat for extra flavor. Drain excess grease and place meat back in pan. Add taco seasoning and cook for a few minutes till well included. Set aside to cool for 10-15min.
-In mixing bowl, mix together eggs and heavy cream till smooth. Stir in onions, salsa, 1 cup cheese, and almond flour.
-Add ground beef to mixing bowl and stir well. Texture WILL look soupy. Perfect!
-Pour into 9inch pan or muffin tins and top with remaining shredded cheese. bake for 35-45min (30-35 for muffins)
-Remove when top is bubbly brown and let sit 5 minutes before serving!
-Perfect to top with sour cream, salsa and guacamole!! DEVOUR AND ENJOY!!!
