Yes my friends. You heard me correctly. Stupid Easy KETO Blueberry Bagels.
I mean, LOOK at that texture!!! It looks like bread, right!!?
R I G H T!!!
If you haven’t hopped on the STUPID EASY bandwagon, make sure to check out my BAGELS, Coconut Flour Bagels and WAFFLES (We call them Piffles and they are SO good!!)
And the best thing about all of the stupid easy recipes is that there is
NO MELTING REQUIRED!
Thats right friends!
No melting and mixing and getting almond flour and egg everywhere!
Just simple, satisfying yums that cook up in minutes!
Back to those beautiful bagels up top… Mmmmmm. blueberries!
This is a perfect sweet treat for weekends, special breakfast dates or… well ANY DAY! You can use either fresh of frozen blueberries depending on the season and I’m sure you could even make a razmattazzzz RASPBERRY rendition! Omg I might have to go make those RIGHT NOW!
This recipe is slightly different than my original bagels so if you are familiar with that cook time and temp, make sure you adjust accordingly. This is going to give you a FLUFFY, decadent, slightly sweet bagel that my husband said almost tasted like a donut. I will take that as a HUGE compliment from Mr Sweet Tooth himself!
Slather this with butter or whipped cream cheese and INHALE!
I hope that you enjoy these as much as we did! I will get a Coconut Flour recipe posted as well, but if you need to conversion, its just 2 TBSP of coconut flour for every 1/2 cup of almond flour 🙂

-1/4 cup blueberries

-Preheat oven to 350
-Mix dry ingredients together, then add eggs and blueberries.

(It will look thin but they will rise!)
-Cook for 15-17min (depending on oven)
-Let cool completly and ENJOY!
This recipe makes 6 large bagels in the tin listed above.
If you have a tin with small with a smaller cavity, you might get 8-9 bagels.
It really is THAT STUPID EASY YALL!
I mean it seriously takes NO time to prep and bakes so fast! Tops should come out golden brown when cooked to perfection. If you want them a bit more dense, you can sprinkle in a tiny bit more almond flour and cook a minute or two longer. The blueberries do make the dough a bit heavy, so let them cool in the tins completly before you remove them. Store in fridge for up to a week or freeze.
If you don’t have a bagel tin, no worries! I got you covered! Grab some parchment paper or a silicone baking mat (we love theses) and mold them into a circle form at about 1/4 inch high. You might yield 6 large bagels or 8-9 smaller ones. I recommend using a plastic bag over your hand as the dough is very sticky.
I have purposefully NOT included Marcos since the ingredients YOU use will most likely be different. Just plug into a carb calculator and adjust accordingly. To lessen carb total, replace with coconut flour or decrease almond flour 1-2 TBSP. 🙂
Make sure to whip these up and tag me on social media so that I can cheer you on and all your amazing Keto Baking skills!!! You can find me on FACEBOOK and INSTAGRAM posting all the daily yums!
ALWAYS remember that Keto can and should be simple,. satisfying and sustainable!!!

You don’t have to melt the mozzarella?
NOT AT ALL!!!
These look yummy.
However, for those of us outside of the Americas would it be so hard to convert cups to grams? There are so many keto recipes that are measured in cups.
That’s a great suggestion! I guess I never realized it was different lol
What would you use if you don’t have Bagel tins?
I forgot to include that and went back and changed it for you! The instructions are now listed for those who don’t have a pan!
I do not have bagel thins. What would you recommend I bake them. I must make these!

How many bagels does this recipe make? I only have one donut pan that makes 6. I may have to buy another one before I can make these.
I forgot to include that and went back and changed it. It makes 6 large bagels in that tin!
Great recipe can’t wait to try this one… will be as good as all the rest! Thank you 😊
Wish I could print this easily
I don’t yet have the print option setup! I need to figure out how to do that for sure!!!
Do you have a PRINT button for your recipes. Somehow I am missing that.
I don’t yet! I need to figure out how to do that for sure!!!
Are you using shredded or fresh mozzarella?
I use shredded! I need to experiment with fresh though and see how it does!!
Any suggestions for someone who can not eat stevia or Splenda I get sick with very servers joint pain so I usually eat things with no sugar or very little real sugar. It does get a little frustrating some times trying to find a sweetener I can use.
Have you tried erithrytol or monk fruit? They are both plant based and I respond very well to them (cannot do either stevia or Splenda either) Otherwise you can omit the sweetener and they will still taste delicious!! Maybe a little extra blueberries in there!
The best recipe I’ve found so far! I use the food processor to get the cheese a fine crumble and it mixes great! Thank you so much!!!
I am so so happy to hear this!!!!
I saw that these freeze, does your stupid easy keto bread basic recipe freeze well too? (love that)
Yes it does!
Does it work baked as a waffle?
Yes absolutely! It will be a bit more crunchy but thats such a yummy texture!
Do I need to spray the tins prior to baking?
Its up to you! I do so they slide out easier (but I have older pans lol)
These were delicious! Mine did not look nearly as pretty as your though. I have the exact bagel/donut tins linked but they got very flat on the top and spread out when baking. Ended up with no middle hole and they don’t slice nicely like bagels should. Any suggestions? Thanks!
I find they slice best after they have cooled! But the texture is delicate so you have to slice carefully! Maybe try a tad more baking soda to make them lift!!
I find this to be helpful to spray them!
How many carbs?
These are amazing! love love love them thank you for sharing.
