Yes my friends. You heard me correctly. Stupid Easy KETO Blueberry Bagels. 

I mean, LOOK at that texture!!!  It looks like bread, right!!?

Thats right friends!
No melting and mixing and getting almond flour and egg everywhere!  
Just simple, satisfying yums that cook up in minutes!

Back to those beautiful bagels up top… Mmmmmm. blueberries!

This is a perfect sweet treat for weekends, special breakfast dates or… well ANY DAY!  You can use either fresh of frozen blueberries depending on the season and I’m sure you could even make a razmattazzzz RASPBERRY rendition! Omg I might have to go make those RIGHT NOW!

This recipe is slightly different than my original bagels so if you are familiar with that cook time and temp, make sure you adjust accordingly. This is going to give you a FLUFFY, decadent, slightly sweet bagel that my husband said almost tasted like a donut. I will take that as a HUGE compliment from Mr Sweet Tooth himself!

Slather this with butter or whipped cream cheese and INHALE!  

I hope that you enjoy these as much as we did!  I will get a Coconut Flour recipe posted as well, but if you need to conversion, its just 2 TBSP of coconut flour for every 1/2 cup of almond flour 🙂

INGREDIENTS:

-2 cups mozzerella cheese
(Mild and blends flavors well)
-1/2 cup almond flour
OR 2 TBSP Coconut Flour

-3 TBSP Swerve confectioners
-1/2 tsp baking soda
-1/4 cup blueberries
-2 eggs

DIRECTIONS:

-Preheat oven to 350
-Mix dry ingredients together, then add eggs and blueberries.
-Place mixture in BAGEL TINS 3/4 full
(It will look thin but they will rise!)
-Cook for 15-17min (depending on oven)
-Let cool completly and ENJOY!

This recipe makes 6 large bagels in the tin listed above.
If you have a tin with small with a smaller cavity, you might get 8-9 bagels.

It really is THAT STUPID EASY YALL!

I mean it seriously takes NO time to prep and bakes so fast!  Tops should come out golden brown when cooked to perfection. If you want them a bit more dense, you can sprinkle in a tiny bit more almond flour and cook a minute or two longer. The blueberries do make the dough a bit heavy, so let them cool in the tins completly before you remove them. Store in fridge for up to a week or freeze.

If you don’t have a bagel tin, no worries! I got you covered! Grab some parchment paper or a silicone baking mat (we love theses) and mold them into a circle form at about 1/4 inch high. You might yield 6 large bagels or 8-9 smaller ones. I recommend using a plastic bag over your hand as the dough is very sticky. 

I have purposefully NOT included Marcos since the ingredients YOU use will most likely be different. Just plug into a carb calculator and adjust accordingly. To lessen carb total, replace with coconut flour or decrease almond flour 1-2 TBSP. 🙂
