This amazingly simple keto cream cheese flatbread sandwich has been a family favorite for years now! If you haven’t yet tried this, you’re in for a real treat!
Whats FUN is that this is a savory version of my CREAM CHEESE PANCAKES and one of the recipes that I used ALL. OF. THE. TIME. when I first started eating Keto 3 years ago!
You can really have some creative liberty with the seasonings you use since the base is so rich and yummy! I love to use the BAGEL SEASONING that you can get everywhere now (Trader Joes is my all time fave of course) or spice it up with some Italian seasoning, garlic, onions… YOU NAME IT!
You can also cook this batter in the DASH MINI WAFFLE IRON (if you don’t have one yet, this is one of my Keto Kitchen MUST HAVES and so tiny and adorable!) The texture will be thicker and different than a traditional flatbread BUT really good!
What I looooooove about these as “pancake shaped” or a flatbread look is how moist they are. I don’t know if you ever smoothed bread when you were younger but it made it into this moist texture and I loooooooved it growing up LOL
Play around with what consistency you enjoy best. This can be 100% flour free or you can add or decrease the flour amounts as you want. Almond flour is my favorite to bake with but if you need coconut flour, try 2-3 TBSP in the mix. The texture WILL be flat but I promise you it is SO GOOD! If its a bit too eggy for you, you can decrease by 1 egg AND add a bit more almond flour!

INGREDIENTS
-1 block softened cream cheese
-5 eggs
-3/4 cup ALMOND FLOUR
-OR 3 TBSP Coconut Flour
-1tsp baking powder
-Dash of salt
This ELECTRIC GRIDDLE is amazing for all of your pancake and flatbread needs!! The unit can be detached from heat control and placed in dishwasher! WIN WIN!
DIRECTIONS
-Blend everything in BLENDER or food processor till smooth.
-LET SIT 5-10min. So important!
-Heat skillet to med/med high and use ghee or coconut oil per batch
-Allow bubbles to form and flip once golden!
-Let flatbread cakes cool in fridge for 30-60min before building sandwich
-Slather mayonnaise, butter or any spread of choice on flatbread
-Layer cheese, lunchmeat and more cheese and INHALE!
These are SO perfect for summer lunches, trips, beach days and anywhere you need a good fat packed protein lunch on the go! We have taken these hiking and they are SO good and satisfying. Perfect for lunches at home too 😉
I don’t currently have macros calculated- but if you want to do the math, they are VERY low per flatbread (Roughly under 1 depending on how large a cake you make)! Plus you can decrease almond flour to lower carbs or omit completely. (More of a crepe like texture when flour is omitted)

I just tried my first batch… in a hurry forgot the baking powder LOL… only poured one before I realized so I added it and am waiting now. The one I made is DELICIOUS anyway… it’s so hot I’m burning my fingers but I can’t resist!!
