If you are missing pancakes on a Sunday morning then these FOR SURE will not dissapoint!
Plus they are stupid easy! Imagine the simplicity or my STUPID EASY BAGELS or BREAD ROUNDS and instead of using shredded cheese, we are using cream cheese! But in my opinion, the best part is that you DO NOT have to melt anything! (That for me is the most frustrating part of some KETO recipes! Don’t get me wrong, the testure is GREAT but just too much work for me lol)
OK. Back to the pancakes!
I know there are some INCREDIBLE recipes out there, this is just my accidental twist on some of them I have seen over the years. I feel like I still have some tweaking to do but HECK, that’s life, isnt it! We are always looking to imprive a GOOD THING! Β And yall. This is a GOOD THING!

INGREDIENTS:
*This is a DOUBLE BATCH recipe. You can EASILY cut this in half π
2 blocks soft cream cheese
10 eggs
1.5 cups ALMOND FLOUR
1/2 cup SWERVE (or low carb sweetener of choice)
1tsp baking powder
Dash of salt
This ELECTRIC GRIDDLE is amazing for all of your pancake and breakfast needs!! The unit can be detached from heat control and placed in dishwasher! WIN WIN!

DIRECTIONS:
-Blend everything in BLENDER or food processor till smooth.
-LET SIT 5-10min. So important!
-Heat skillet to med/med high and use ghee or coconut oil per batch
-Allow bubbles to form and flip once golden!
-Slather with butter and Lakanto Sugar Free SyrupΒ (Or ChocZero!)Β and ENJOY!
I donβt currently have macros calculated- but if you want to do the math, they are VERY low per cake (Roughly under 1 depending on how large a cake you make)! Plus you can decrease almond flour to lower carbs or omit completely. (More of a crepe like texture when flour is omitted)

How or can you store leftover batter. Or should you cook all and refrigerate or freeze??
I think it would store well in the fridge for 24 hours! I am NOT the best at this though (expiration dates lol) so I would cook it up by that time π

Great question! 1 block is typically 8oz so if you made the double batch listed, you would use 16oz π

Not dumb at all! The waffles are actually my FAVORITE way to make them right now!!!
Made these today. Dropped off 2 eggs, added teaspoon of vanilla flavoring, 1/2 teaspoon xanthum gum… let it sit 10 plus minutes while regular waffle iron heated up, made 8!! Ate 2, as did my other three folks. My picky child ate his! My hubby drooled. Very good!! Thanks maβam!
