Stupid Easy KETO Bread Base does it again yall!

This is a super fun and incredibly easy rendition to a childhood classic PIGS IN A BLANKET!  But instead of being wrapped, I decided to make them into little piggy puffs and let me tell you… THEY ARE SO GOOD!!

I used my all time favorite MEGA CUPCAKE TIN and sliced some polish sausage to place in the center. It really is that easy! With the Stupid Easy Bagel Base, this lovely little puff is packed with all sorts of flavor! Make sure to check out the video below with the extras I added to the batter… Ok ok… I added parmesean cheese and BACON.

You can totally make these into the traditional “pigs in a blanket” style and wrap the batter around them. I just loved how easy the puffs were to make in the mega tin and I looooooove the convenience of these wonderful PARCHMENT PAPER BAKING CUPS that I use for EVERYTHING!!!

INSTRUCTIONS

Preheat oven to 400 Spray tins with cooking spray (We use this coconut oil spray) OR place parchment baking cups in tin
Mix all dry ingredients first THEN add eggs!
Scoop mixture evenly into muffin tin (I use a sandwich bag to keep my hands clean)
Smoosh sausage or little smokie into batter and cover top with extra
Bake for 12-17 minutesdepending on your oven cook speed
Store in air tight container for up to a week in the fridge!

INGREDIENTS

4 large eggs
4 cup shredded cheese (mozzarella, cheddar, colby jack, parm etc… mix and match)

1.5-2 cups almond flour (I tend to go a bit more on the AF.  We love THIS)
1 tbsp baking powder (We use THIS) OR 1/2 TBS of Baking Soda for a super fluff!
Seasonings to your liking (Garlic, salt, everything but the bagel seasoning!)
