The most delicious Keto Coconut Flour Waffle Bread that you ever did see!
Delicious. Moist. Stupid easy and fast to make and I PROMISE YOU, the entire family is going to go wild over!! This original recipe HERE was made with almond flour but I have so many friends in our FACEBOOK COMMUNITY that need a coconut flour alternative. This ratio is PERFECT, the taste is slightly sweet but not eggy at all, and I am so so happy to share it with you all!

My ONLY must have for this recipe to work perfectly as a WAFFLE BREAD is the DASH MINI WAFFLE IRON. If you don’t yet have one, they are under $10 and ahhhhhhmaazing for ALL the Keto things. But if you don’t have the mini waffle iron you can still make this recipe as a KETO FLATBREAD combo OR use your large waffle maker (the texture will just be different)! So don’t fret!!
Now back to the recipe! You can get fun and creative with the way you want to season it and have some amazing different flavors! I have tried plain (just salt, no seasoning), Everything Bagel Seasoning, Garlic, Onion and Slightly Sweet (1-2 tbsp erythritol and a small sprinkle of yeast for that BREAD flavor!).
No matter which way you try it, they make the yummiest sandwich bread and so perfect for summer picnics and beach trips! Listed below I have provided what I would do in using my “Everything Bagel” recipe because it is my current obsession! Use the “slightly sweet” to make the kids PB&J’s!! So many amazing ways to eat this DELISH bread!
And yes… I unashamedly have 3 mini waffle irons because 1-they are dang cute and 2- it makes cook time SO fast! I can have a batch done in under 10-12min!

INGREDIENTS:
1 8oz block cream cheese
3 tbsp coconut flour
5 eggs
1.5tbsp erythritol (optional)
OR seasoning to taste like Everything Bagel Seasoning
DIRECTIONS:
-Blend everything in BLENDER or food processor till smooth.
-LET SIT 5-10min. So important!
-Pre-Heat Dash mini waffle iron and use spray of coconut oil per batch.
-Pour roughly 1/4 cup into waffle maker and let cook for 2min (till golden tops)
-Repeat steps for remainder of batter and store in fridge for up to 1 week.
-Batch makes 12-15 mini waffle breads!

These are a total game changer w/the KETO way of life. Made a batch of these and had actual hamburger sandwiches. Then had the rest as dessert w/no sugar Maple syrup. I’ll be using this recipe often. Husband was really happy. Next I will be bring back our weekend breakfast sandwiches. Our take of the “McGriddle ” w/ sausage egg and cheese. YUMMMY

Yum! I used 1TBL monk fruit and 1TBL everything but the bagel seasoning and they are perfect!
Oh, I forgot to say that I used the Dash mini griddle instead of the waffle maker, so they are like little round bread slices.

Hey Jamie! I haven’t tried these yet but I did try and break down calories and carbs. If I’m calculating right it should be about 75 calories and 1net carb per waffle If you make 12 and 60 calories and .7 net carbs if you make 15 waffles. Hope this helps. I will be making them today. I try so hard to like chaffles but they are all so eggy.
