Yall. We’ve done it again! Yet ANOTHER Keto bread that you are going to LOVE!
Best thing is its stupid easy (duuuuhhhhhhh) and something I have started to meal prep every week! The ease and texture of this recipe isn’t my STUPID EASY BAGELS but with a blender, this texture is out of this world amazing! It holds a sandwich like no other and has a great fluffy texture! With the right amount of almond flour, this bad boy does NOT have an eggy or cheese texture (something often hard to find in keto breads).
I hope you love them as much as we do!!
My ONLY must have for this recipe to work perfectly as a WAFFLE BREAD is the DASH MINI WAFFLE IRON. If you don’t yet have one, they are under $10 and ahhhhhhmaazing for ALL the Keto things. But if you don’t have the mini waffle iron you can still make this recipe in a KETO FLATBREAD combo OR use your large waffle maker (the texture will just be different)! So don’t fret!!
Now back to the recipe! You can get fun and creative with the way you want to season it and have some amazing different flavors! I have tried plain (just salt, no seasoning), Everything Bagel Seasoning, Garlic, Onion and Slightly Sweet (1-2 tbsp erythritol and a small sprinkle of yeast for that BREAD flavor!).
No matter which way you try it, they make the yummiest sandwich bread and so perfect for summer picnics and beach trips! Listed below I have provided what I would do in using my “Everything Bagel” recipe because it is my current obsession! Use the “slightly sweet” to make the kids PB&J’s!! So many amazing ways to eat this DELISH bread!
And yes… I unashamedly have 3 mini waffle irons because 1-they are dang cute and 2- it makes cook time SO fast! I can have a batch done in under 10-12min!

INGREDIENTS:
1 (8oz) block soft cream cheese
5 eggs
3/4 cups Almond Flour
OR 3-4 TBSP Coconut Flour
(For a thicker waffle, you can add 1-2TBSP more of flour. Makes a great texture!)
1 heaping tsp Everything Bagel Seasoning
1tsp baking powder
Dash of salt
DIRECTIONS:
-Blend everything in BLENDER or food processor till smooth.
-LET SIT 5-10min. So important!
-Pre-Heat Dash mini waffle iron and use spray of coconut oil per batch.
-Pour roughly 1/4 cup into waffle maker and let cook for 2min (till golden tops)
-Repeat steps for remainder of batter and store in fridge for up to 1 week.
-Batch makes 12-15 mini waffle breads!

I put some shredded cheese on the heated waffle maker. And some egg. More cheese. Everything seasoning and cook. No flour needed

I have the Dash mini that I use for eggs, will that work or would the waffle maker do a better job?
It does work! The texture is a bit different and I prefer the density of the waffle maker but the griddle works well 🙂

Flavor is awesome. I made mine in a regular waffle maker. They are like a super soft bread. Can they be toasted? I do think I made mine to thick. Also, has anyone done it with Bob’s Redmill fake eggs?

I was so excited to see this recipe and promptly made it but was unhappy with the results. It tasted too much like eggs . Any suggestions ?

You can use coconut flour if that works? The substitution is 4TBSP per every cup of normal flour.
Does the coconut flour give it a sweeter taste
Yes, slightly!
What about just trying the equivalent in egg whites instead of the whole eggs? I find the yolks to be the eggy tasting part. I don’t notice egg whites. They are not as obnoxiously eggy tasting for my part.
I use room temp eggs. Just put them in a bowl of hot water while you gather the other ingredients. Just takes a couple of minutes.
How would I cook this if I don’t have a waffle maker??

I got my 2 waffle irons yesterday and whipped up a plain batch. However, when I poured the batter in I topped them with different stuff: coconut, Italian seasoning, EBTBagel, chipotle, smoked paprika, cinnamon AND my favorite, Lily’s mini chocolate chips. I sprinkled some Allulose on the cinnamon, coconut, and chocolate chip but will add that to the next batch of batter for chocolate chip for sweetness.
How do you store them? Freezer? Fridge?
Both work perfectly!
I can’t have almond flour. How much coconut flower should I use?
We substitute 2tbsp for every 1/2 cup almond flour and it works great!

I guess I could do these on my regular waffle iron, correct. It makes 4 waffles at a time so I’m guessing 1 waffle would be equivalent of two mini waffles?
Yes you can! Changes the consistency and texture but works just fine 🙂
Dumb question: I don’t want/need another kitchen gadget, so will my Belgian waffle maker still do the trick?
It will work for sure, it will just change the texture since the caverns are so much deeper. But its great and we use the big one for the PIFFLE all the time!

I have 2 mini’s … love them. Also I make this and use Italian seasoning for a quick little pizza or as a hamburger bun. For the pizza I cook it a little longer for a crispy crust. So delicious.

I’m not sure how my carb count came to 2.25 each using your exact recipe with coconut flour (1/4 cup) 5 eggs and 8oz cream cheese… any suggestions

What is the carb count per waffle
I am reluctant to use Everything But The Bagel Seasoning because of the Poppy seeds (they will make you pop positive for trace opiates in aDOT drug test), can you recommend something else? Thanks!
You can honestly use anything! Garlic! Onion! Italian! You name it!
Oh my goodness these are soooo yummy! The EBTB seasoning takes these over the top! We made our first batch today and we made Reuben sandwiches with them. So darn good! I can’t wait to play around with these as savory and sweet too. Thank you for sharing your winning recipe, Rachael!

We love your recipe. We have made it twice now, the first time I forgot the Everything but the bagel seasoning. We had used them as waffles and then as bread for a peanut butter and strawberry sandwich, and used them like pita bread for homemade Gyro’s. Today I made them with the seasoning and cooked as pancakes and as waffles. We used the pancake style as buns for a bacon cheese burger. Thanks!

Many love to use coconut flour as a sub! Try 2 TBSP to start and if you want it thicker, try 3!

These are great! These will be a regular in our house. When I ran the macros, it came out to 1.7 carbs each. The cream cheese alone was almost 1 carb each. Regardless, this recipe is fantastic!

The consistency is a LITTLE different but not bad! I am still working on a perfect ratio swap but 4-5tbsp is a good starting out point!

How does work with no milk for the batter?
There is plenty of “wet” in those eggs and that cream cheese is dairy. No need for additional fluids. Remember, this is not a traditional batter; it lacks a traditional absorber in the firm of grain flour, so no need for much fluid ingredient.

Have you tried using a combo of almond flour and coconut flour together? If so, what ratio did you use?

omg…these are AHH-mazing! Tried it with just one egg first and divided proportions of other ingredients sort of guessing – that made two and threw some swiss cheese on the hot chaffles and had a little hot cheese melted sandwich! Great recipe! Will be making full batch tomorrow!

Thank you for this recipe!! I just made them with the everything bagel seasoning. I did use 2 eggs and 3 egg whites. I’m not a big fan of the eggy taste. They turned out perfect! Hubby had his with a egg, ham, pepper jack cheese, mayo and hot sauce. I made mine with cream cheese, ham, and tomato. We both loved them!! Tonight we are going to have them for hamburgers. I just made this for the third time, it is a game changer!
First time I used Almond Flour and this time I used Coconut Flour.
I like Almond Flour better.
Here’s the deal, I didn’t pay attention to the different amount of flour you used and I did 3/4 cup coconut flour!! So it was definitely thicker and now I understand.
Here is my question: what did I just to to the carb count? Do you know. Lesson learned, came out thicker but still awesome!

Not crispy like a cheese waffle. Much softer texture. I put them in the toaster and they crisp just a bit but not too much 🙂

OK, so I see I’m a little late to the Chaffle Party, but thank goodness I found you. Because of you, I ordered the Dash Mini Waffle Maker, received today and got right to it. This is a game changer, that saying is over used, I have never used it, but today, I say, game changer. I didn’t have any everything bagel seasoning… yet, and they were still delicious. Thank you, thank you, thank you!!! I will now be bringing these with me, when we’re on the road. Now I can have a burger with my own yummy “buns”.
